Foolproof Ultra-Gooey Mac & Cheese

2 servings


In a medium bowls

  • 6 ounces macaroni noodles

In a second medium bowls

  • 6 ounces grated cheddar cheese (or any melting cheese of your choice. Go nuts!)

In a measuring cup

  • 6.5 ounces evaporated milk
  • 1/8th tsp baking soda

(Optional) In a microwave-safe bowl

  • 3 minced garlic cloves
  • 15 ml butter

  1. In a medium to large pan, add macaroni, a pinch of salt, and enough cold water to just barely cover the noodles. Cook on high until almost no water remains, stirring regularly to ensure noodles don’t stick to the pan.
  2. (Optional) Microwave butter and garlic for a 20-30 seconds until butter just begins to foam. Stir into noodles 30 seconds before adding the evaporated milk.
  3. Add evaporated milk to pan and stir constantly until is begins to boil. Turn heat to low.
  4. Add cheese and stir constantly until melted, 2 minutes or so

Notes

  • The baking soda should help guard against getting a grainy texture in your sauce. It’s not strictly necessary though, if your technique is on point
